Hot Pepper Relish
Easy Recipe (Makes 8 Servings)
INGREDIENTS:
2 Anaheim Peppers
2 Fresno Peppers
1 Shallot
1/4 Cup White Vinegar
1/8 Cup White Sugar
1/2 Tbsp Kosher Salt
STEPS:
Roughly chop your peppers and shallot and get them chopped finely in a blender or food processor
Mix in the Kosher salt with your pepper mixture and set it over a mesh sieve for about 2 hours to draw out the moisture
Rinse it under cold water, and press the mixture against the mesh sieve to try and get the remaining moisture out
Bring up your vinegar and sugar to a boil, then stir in the pepper mixture
Bring heat down to low and let it simmer for about 10-15 minutes, transfer to a container and enjoy!
