Buffalo Chicken Wrap
45-minute recipe (Serves 2)
INGREDIENTS (Makes 2 Wraps):
1 large boneless, skinless chicken breast
2 large flour tortillas
1/3 bottle Frank's Wing Sauce
2 tbsp unsalted butter
4-6 oz. pepper jack cheese
For the slaw:
2 1/2 cups shredded purple cabbage
1/4 cup sliced green onion
1/3 cup light mayo
1 tbsp vinegar
1.5 tbsp honey
1.5 tsp dijon mustard
Salt and pepper to taste
For the jalapeno crema
2 fresh jalapenos
1 cup light sour cream
1 garlic clove
Juice from 1 lime
1/3 cup cilantro leaves and stems
1/2 tbsp olive oil
1/2 tsp cumin
Salt and pepper to taste

STEPS:
Prep work: Quarter the jalapenos, juice your lime, grate your pepper jack cheese, and slice up your green onion.
Make the crema: add the jalapenos, sour cream, garlic, lime juice, cilantro, olive oil, some salt and black pepper into a blender or food processor, and blend until smooth. Funnel it into a squeeze bottle or put it in a storage container in the fridge until you're ready to use it.
Make the slaw: add the cabbage, green onion, mayo, vinegar, honey, dijon, and salt and pepper to a bowl. Mix thoroughly, taste for seasonings, and put it in the fridge as well.
Slice the chicken breast in half and pound it out nice and thin. Add salt and pepper, and pan fry for 4-5 minutes per side over medium-high heat until it reaches 165 F internal. You could grill or bake it too, whatever you prefer!
While the chicken is cooking, add the Frank's sauce and butter into a small saucepan over medium heat, and stir to combine. This should take 3-4 minutes.
Add your chicken to the saucepan with the sauce, and let it coat the chicken. You can cook the mixture down for another 2-3 minutes.
Time to assemble! (Repeat this 2x) Place your tortilla down, add half the chicken and sauce to the middle and top with half of the cheese. Put it under the broiler for about 1 minute (be careful not to leave it under too long or the tortilla will become too crispy to wrap). After the cheese is melted, top it with some of the slaw and crema to your preference.
Wrap the tortilla up, and additionally griddle it (I didn't find this necessary since the tortilla cooked a bit in the oven under the broiler), and enjoy!
